    That's valid. But, also keep in mind that "traditional" recipes came about out of necessity, and they stayed the same for centuries because agricultural advancements were slow. But, since the advent of refrigeration changed everything, advancements have come quickly.

    For example, since indigenous people began using corn, they have had to nixtamalize (soak the grain in an alkaline solution) in order to bring out the nutritional characteristics of the corn. Through many generations of selective breeding, we've managed to create corn that doesn't require nixtamalization to be nutritious and easy to work with in meals.

    So, for modern corn variants nixtamalization isn't needed, but if you use something like maize, you need to nixtamalize it. Here is an excerpt from Wikipedia that seems to align with what you're experiencing: While cornmeal made from untreated ground maize is unable by itself to form a dough on addition of water, nixtamalized cornmeal will form a dough, called masa.

    I hope this helps, but just remember, if you like the result of the wrong way of making something, then it wasn't wrong, just a happy little accident.

    My guess is that you were using cornmeal that wasn't nixtamalized

    Often times when you delete something off a computer, the computer simply deletes the address of the data, but doesn't overwrite the data.

    Think of a map for a city. If you delete a house off the map, you may not be able to find it anymore, but the house is still there. It's the same for computer storage

    I made Margherita pizza!

    I used premade dough from Sprouts -this was the first and last time using store bought dough - tomato sauce - made with with sauteed garlic, olive oil salt, basil, oregano, and chili flakes - heirloom tomatoes, fresh mozzarella, ricotta, fresh basil. I finished it with fresh basil, olive oil, and fresh grated aged parmesan. Finally I brushed melted butter on the crust and sprinkled smokey garlic salt on the butter.     Can't figure out why my computer defaults to the 1gig lan, rather than 40gig for connection to nas

    So I was recently gifted some Mellanox 40gig network cards that I installed in my NAS and my desktop and connected with AOC fiber. I gave them both static IP addresses on their own dedicated subnet that's not used anywhere else in my network. I was able to run `iperf3` between both computers, and that worked exactly as expected. At that point, I edited `/etc/fstab` to update the IP addresses for my mounted network shares. I ran `# mount -a` successfully and thought all was well. The problem is, my computer defaults to my one gig lan connection for some reason, despite the entries in fstab using a completely different subnet. The only way I've found to force it to work properly is to disable my LAN connection, then remount the network shares, then reenable the LAN port. On one occasion I noticed that a file I was duplicating on my NAS was being downloaded via my LAN to my computer to duplicate, then being uploaded back to the NAS via the fiber connection. Does anyone have any clue why this may be happening or how to fix it more permanently? The NAS is Debian, my desktop is Manjaro.

    A while back I got a Unifi AP, and decided to name it WiFi UFO. My main Wi-Fi SSID is `¯⁠\⁠_⁠(⁠ツ⁠)⁠_⁠/⁠¯` and I just got a PoE switch, and it's bugging me that I'm not thinking of something more amusing to name it than `USW-24-PoE`.

    I mod a community here, and for the last three days posts made to that community have not been showing up outside of this instance. Specifically, I have an account on Lemmy World, and I can't see any recent posts from the community I mod on that account. Also, I follow several communities from other instances including lemmy.world and lemmy.ml and none of the content for those communities have updated here in the last three days, though when I check them from accounts I have with other instances, they all show up fine. I have checked all of this on my mobile browser, my desktop browser, and Jerboa. Does anyone know what's going on? Does this have anything to do with the steps @TheDude@sh.itjust.works has been taking to combat bots? This is really problematic, it's like we've been shadow defederated. Edit: Seriously, why would someone downvote this post? Edit 2: I'm not sure if this is related or not, but for the first time, I'm not able to respond to a Kbin users comment. That happened in this post.

    How can I access communities on this instance from other instances?

    I was exploring another instance (lemmy.world), and I wondered if I could find a community on this instance that I moderate (https://sh.itjust.works/c/mash). So I tried searching for the name, that didn't work. I tried searching !mash@sh.itjust.works, that didn't work either. Finally I tried going directly to https://lemmy.world/c/mash@sh.itjust.works, and that led to a Lemmy page saying I had entered a broken link. I also tried going to https://lemmy.world/c/technology@beehaw.org, and that did work. So am I doing something wrong?
