Does tofu exacerbate depression?

A family friend who's a psychiatrist told us that tofu can worsen depression. I'm skeptical, but a web search revealed the following: > Even though soy is packed with lean protein, it's also packed with trypsin and protease inhibitors—enzymes that make the digestion of protein incredibly difficult. Soy is also high in copper, a mineral linked to anxious behavior, and loaded with oligosaccharides, which are known to cause flatulence. Map of Vegan Communities in Ecuador (South America)

Where can I find a directory of vegan communities in Ecuador? I'm currently eating a mostly raw vegan diet, and I'm trying to transition to more of a fruitarian diet. But living in Northern Europe, the fruit options here are very limited. I've learned about a few vegan communities in Ecuador that I'd like to visit, but information about them is sparse. I'm going on a trip to South America soon to visit Ecuador. I've tried googling for "vegan ecuador," but most of the results are just about restaurants. I don't care much for capitalism, eating at a restaurant, or "eco-tourism" (veganism isn't a diet!). I am looking to learn about vegan projects in Ecuador, possibly joining a vegan intentional community there. But first, to plan my trip, I'd like to get a list of all the vegan intentional communities in Ecuador. Are there any lists of actual vegan *communities* in Ecuador?

How to deal with gas from high fiber food?

I want to start eating more frequently plant-based foods, especially oats, lentils, chickpeas, etc. which are high on fiber. The thing is, I'm kinda hesitant to do so, because almost every time I eat them, soon enough I get the side effects for the rest of the day and the fact that I might spend a lot of time outside without going home doesn't help me.. (One solution would be to change some social norms around gas or feel less insecure.. I try to help others who are in my place to feel comfortable, but I don't know if others would do that for me🤷) What could I do to help this situation? Is it possible for my body to digest it properly or will always cause extra gas? Ideas I have read/thought so far (with some questions): 1) Soaking them in water for 12+hours and throwing the water. How many nutriens do I lose that way? How does it work? (I read somewhere that it simply takes away some sugars which cause digestion issues.) Does it work for all grains and seeds? 2) Putting them in a blender. That's kinda my idea, but would essentially cutting them in a finer and liquid state make them easier to digest? (Probably won't work at all for insoluble fiber though.) 3) Boiling/heating them up. Does this work? Does it degrade any nutrients? 4) Eating more. I've read that the gut adapts and digests them better over time. (Though I don't know how much improvement I should notice.) I'd just like to minimize-eliminate the side-effects without ruining their nutrients if possible :) Edit: Thank you everyone for your help! List of South American Fruit Trees (Amazon Forest Gardening)

Where can I find a list of fruit trees that grow in the Amazon? I'm currently eating a mostly raw vegan diet, and I'm trying to transition to fruitarian diet. But I live in Northern Europe, and the fruit options here are very limited. Obviously I'd be better living some place topical, and I've been seeing some posts from some sustainable communities in South America. Specifically, there seems to be many permaculture projects in the Amazon that are able to grow their own fruits in fruit-heavy forest gardens. I've learned about a lot of new exotic fruits from some of their videos, but what I really want is a comprehensive list of all the fruits that one can grow in the Amazon. Does anyone know where I can find a list of fruits that grow in the Amazon (native and non-native)?

How much uric acid do we get from eating lentils?

My family is trying to get me to eat less lentils because they said it's full of uric acid. But they curiously don't say the same thing about eating meat everyday. How much uric acid is even in lentils compared to meat? Is meat worse on uric acid altogether or is there a nuance I'm missing?

Ramblings on an 8-year veganniversary

I got some bloodwork done recently and in the words of my physician my results were great. This news has put me in a good, affirming, and reflective mood about the journey so far. Going vegan seemed like a big deal at first, when I considered it before taking the plunge (I was already vegetarian) and afterwards when learning to socialize around food with non-vegans, but after a couple years it's just become what I do. And it's not a big deal to me that my diet isn't the norm. I do live in a big cosmopolitan city, which definitely makes being vegan easier. It took me a couple years before I clued into supplementing. PSA: If you're vegan, you should take a B12 supplement of some form. Supplementing other things isn't as important. Just about my only frustration is the greater cost of prepared goods and sweets, which I privately dub the ‘vegan tax’ lol. Vegan donuts or ice cream are twice or thrice the price of their equivalents. That kind of thing. It add ups if you have a sweet tooth like me :P, although maybe the added financial cost has some health-related benefits related to number of donuts consumed per year, etc. I've never thought about going back, as in eating animal products again. I do do a couple non-vegan things for cost reasons at the moment, like I buy jeans from Winners that have the leather patches on the rear that jeans are seemingly are obligated to bear. My cosmetics and bathroom products are probably not all vegan, although many are. I recently learned that my water-based sexual lubricant probably isn't vegan due to glycerin. That's a new frontier of learning for me :) In the last couple years I’ve started only using the term vegan with other vegans, as a shorthand, or when I want to refer to the underlying philosophy. In everyday conversation I use "plant-based", as I don't want non-vegans to feel judged, because I think many feel judged simply by hearing the word regardless of my intent, and I ultimately think their feeling judged is counterproductive. I think going vegan changed me a little in ways I didn't expect, like it generally made me a more critical thinking, conscientious, and compassionate person over time. If I could have cloned myself before I went vegan and compared two versions of me - with and without being vegan the last 8 years – I think the vegan me would score higher on a measure of anti-racism or anti-ableism or egalitarianism, know more about greenwashing, and be more critical of the effects of capitalism – just as examples. That’s just a guess. And I might be confusing cause and effect. As I understand it now, veganism is more central to my identity and worldview than practically anything. To celebrate my veganniversary I think I might try to make my first vegan pizza! I’ve had delicious vegan pizzas before with vegan cheese, nooch, slices of potato, and pesto as a base versus tomato sauce. Other toppings as well, but I highlight those as I think they combine cheesiness, creaminess, and saltiness to approximate traditional pizza cheesiness quite desirably. Thickeners for cream pies

If anyone has a better idea for a title, this one’s a little iffy… I found a new yogurt flavor (alpro lemon-lime) that tastes just like key lime pie to me. I’d like to make it into an actual pie, but it’s a bit too runny. I’d prefer to avoid cooking the yogurt, so I figured corn starch, flour, and tapioca would all be out. I could do chia seeds, but I don’t necessarily want that texture. Any ideas?

How to get by as a vegan in a rural area

I live in a vast rural area in the central valley of California. Here, people are fanatical carnivores. There is very little vegan food and I live very far from where most of it is available and don't drive for many reasons many of them environmental. Getting there would require riding a bike in the heat most of the year and people here hate bicyclists. Delivery like doordash is really expensive and only the same two dashers will take my vegan order I've noticed. Has anyone found any useful tips for this basic kind of situation that I'm driving at?
